El Gordo del Circo is a wine made from old vineyards located in Olmedo, in the province of Valladolid, where Verdejo displays a distinctive and particular character. Pale yellow in colour with greenish hues and a very attractive shine. On the nose, herbaceous tones stand out, subtle menthol and some aniseed tones, very well accompanied by notes of apple, grapefruit and pineapple. On the palate, it is tasty, fresh, with body and structure. It has a persistent finish characteristic of this variety.

  • Soil: Grapes from vines around 30 years old, hand-harvested and trellised, alternating between mechanical and manual harvesting. Gravel and sandy soils. Grapes from the lands of Olmedo, Valdestillas and Segovia, 100% Verdejo.
  • Winemaking: Maceration of grapes at low temperature for 24 hours. Fermentation of only the yolk must at low temperature to extract a large quantity of aromatic compounds from the grape.
  • Tasting Notes: Straw yellow in color, with greenish hues, clean, bright and transparent. On the nose it is elegant, of great intensity, initially presenting balsamic and varietal aromas such as fennel, hay, cut grass and anise, which give way to notes of citrus and white fruits. On the palate it is broad, fresh, with intense acidity, maintaining the perfect balance with the sugar.
  • Maturation: Aging on lees for 5 months.
