It is not an alcoholic wine, nor aromatic, it is a strong and solid wine, which, because of its tannin, can tolerate its volume in alcohol (...) Perhaps for these reasons, almost as much for its other qualities, it is more sought after than any other wine from Évora for retail sale in the warehouses of Lisbon.'   • Soil: Predominantly granite soils with some schist. The vineyards are grown dry, without irrigation, under a certified organic production regime and certified by the Alentejo sustainability program. Vines are between 25 and 30 years old.
  • Winemaking: Manual night harvest. The grapes are then selected on a sorting table, ensuring that only the best fruit enters the tank. The grapes are then conveyed to the fermentation tank by gravity, without the use of any pump, allowing for a gentle and long extraction. Fermentation is spontaneous and the total fermentation time is between 25-40 days. The second malolactic fermentation occurs partially in barrels (30%) and the remainder in tanks.

  • Maturation: Total aging before release is 10 years, divided into 36 months in 228-liter French oak barrels, approximately 12 months in 500-liter vats, and subsequently 6 years of aging in the bottle.
