Technical Sheet
  • Soil: Inspired by traditional methods of sparkling wine production, always blending the new harvest with some "vin de reserve".
  • Winemaking: Manual night harvest, sorting table, direct pressing without crushing and cold decantation for approximately 12 hours, without additives. Spontaneous alcoholic and malolactic fermentation. The wine of the year will be blended with the "reserve wine", a 5-year-old solera. Second fermentation in the bottle with free yeasts.
  • Tasting Notes: Light pink color, subtle nose, fine bubble, fresh notes of citrus, some red fruit combined with notes of toasted bread from good aging.
  • Maturation: 24 Month Sur Late Internship.
  • Serve: Between 7ºC and 9ºC
  • Winemaker: António Maçanita and Sandra Sárria

  • Food Pairing: Pairs well with fish, seafood and salads. It has volume and structure for white meat dishes. Good for Indian, Thai and sushi food.
