  • Winemaking: Selective manual harvest in 20 kg boxes. Selection on a sorting table. Vats filled by gravity. Spontaneous alcoholic and malolactic fermentation.

  • Maturation: Aged in stainless steel vats with fermentation at controlled temperatures.
