Technical Sheet
  • Soil: Plot of 10.5 hectares, part of a group of 12 hectares, of new vineyards (planted in 2003), installed on a wide slope of medium altitude (375 meters), exposed to the south, with a gradient of approximately 20%. Soil of granite origin.
  • Winemaking: The grapes were harvested on August 27th. The grapes were foot-stomped in 1000 L vats.
  • Tasting Notes: Aroma of cherries and flowers. Good volume in the mouth, with dense but elegant tannins and a long finish. Wine to be enjoyed with friends at a dinner table.
  • Maturation: Placed in old chestnut barrels, with around 30% of the stems, where alcoholic fermentation took place for 12 days. Two daily pumping overs were carried out entirely manually, using a bucket, and the wine was extracted by gravity. The wine underwent malolactic fermentation and was aged in stainless steel tanks. This is a wine in which no mechanical process was used throughout its vinification and ageing process and it was not fined or filtered. After bottling, it remained in the cellar for 14 months.
  • Serve: Between 14ºC and 16ºC. It should be decanted 1 hour before serving.
  • Winemaker: Francisco Montenegro and Amílcar Salgado
  • Conservation: Storage lying down at a temperature of 15ºC.
  • Food Pairing: Red meat and, after 10 or more years, a soft cheese.
