Technical Sheet
  • Soil: An original bet on a classic German grape variety, planted on a small plateau with wide horizons, within sight of the mountains but out of their shadow, it is the plot with the greatest exposure to the sun, hence the name, and to the refreshing Atlantic winds. Clay-limestone soils, about 5 km from the Atlantic coast.
  • Winemaking: This wine is the result of careful vinification using the classic “open spout” process, with total destemming. The resulting must was statically decanted for 18 hours and began spontaneous fermentation with indigenous yeasts in stainless steel tanks with temperature control (16-18ºC) for 14 days.
  • Tasting Notes: In the mouth it is dry, with a very lively vegetal character and vibrant acidity, unctuous, with a rich texture and waxy notes, with hints of stone fruit and a citrus finish. It finishes with salt and minerality.
