  • Soil: The grapes come from vineyards that are almost a century old, with rugged slopes and rough soil.
  • Winemaking: Total destemming, 10 days of fermentation at 20-22ºC and 7 days of maceration after fermentation.
  • Tasting Notes: Deep ruby color. Aroma of forest fruits, eucalyptus leaves, pine and dried plums. Solid, with great structure, but with the balance and elegance typical of Gaivosas. Great complexity and with many good years ahead.
  • Maturation: Aged for 15 months in new and 2-year-old French oak barrels.
  • Serve: Between 16ºC and 18ºC. Decant 1 hour before serving.
  • Winemaker: Tiago Alves de Souza
  • Conservation: 15 to 20 years.
  • Food Pairing: Roasted red meat, lightly caramelized, or with black fruit jelly. Portuguese “Azeitão” cheese or a traditional “Roquefort”.
