  • Winemaking: The process is carried out grape variety by grape variety. The Antão Vaz grapes are destemmed and lightly pressed in a vacuum. After defecation, they ferment at a controlled temperature of between 10ºC and 12ºC. The Arinto grapes are destemmed and sent, without being crushed, to "vinimatics", for skin maceration of between 6 and 10 hours. They are then pressed and sent to the cold chamber.
