  • Soil: Inspired by traditional methods of sparkling wine production, always blending the new harvest with some "vin de reserve".
  • Winemaking: Manual night harvest, sorting table, direct pressing without crushing and cold decantation for approximately 12 hours, without additives. Spontaneous alcoholic and malolactic fermentation. The wine of the year will be blended with the "reserve wine", a 5-year-old solera. Second fermentation in the bottle with free yeasts.
  • Tasting Notes: Clear straw yellow color, fine bubbles, intense nose with notes of citrus and toasted bread. Medium-bodied attack, with beautiful acidity, aromas are repeated in the retronasal. Long finish, good texture and persistence.
  • Maturation: 36-month Sur Late internship.
