  • Soil: Plot of 10.5 hectares, part of a group of 12 hectares of vineyards planted in 2003, located on a wide, medium-altitude slope (375 metres), facing south, with a gradient of approximately 20%. Soil of granite origin.
  • Winemaking: The grapes were harvested on the 29th and 30th of September and on the 11th of October. The grapes were foot-stomped in 1000 L vats.
  • Tasting Notes: Aroma of black fruit, hints of olive and earthy flavor. Spices and mint dominate the palate. Dense but elegant tannins. Powerful, fresh, mineral and a great balance between acidity and tannins.
  • Maturation: The wine was placed in old chestnut barrels, over 100 years old, where alcoholic fermentation took place for 20 days. Two daily pumping overs were carried out entirely manually, using a bucket, and the wine was extracted by gravity. The wine underwent malolactic fermentation in stainless steel tanks, after which it was returned to the barrels where alcoholic fermentation took place to age for 12 months. This is a wine in which no mechanical process was used throughout its winemaking and ageing process and which was not fined or filtered. After bottling, it remained in the cellar for 12 months.
  • Serve: Between 16ºC and 18ºC. It should be decanted 1 hour before serving.

  • Conservation: Storage lying down at a temperature of 15ºC.
