  • Soil: The grapes come from vineyards on schist soil.
  • Winemaking: The grapes are crushed in a granite tank for 3 hours, followed by pressing in a vertical press. The must flows by gravity into cement tanks in an underground cellar with optimal natural temperature and humidity conditions. Spontaneous fermentation takes place without temperature control.
