  • Winemaking: The bunches selected in the vineyard are partially destemmed and transported by gravity to a small cement press where the 30% of the grapes are fermented at a low temperature for 35 days. After the alcoholic fermentation, without major oxidation prevention measures, the malolactic fermentation begins spontaneously, which is interrupted halfway through.
