Ovelha Negra is a wine with an intense, deep red colour. It has a complex, intense aroma with notes of red fruits, strawberries, cherries and very ripe or jammed raspberries, orange blossom with hints of mocha and candied fruit. On the palate, the wine has a round, voluminous attack with a good presence of tannins which, due to the grape varieties and personality, are provocative and robust but with a silky texture. It shows density and body, with a long and persistent finish.

  • Soil: Produced at Herdade das Assentes de Baixo, from grapes of the Trincadeira and Alicante Bouschet varieties, carefully selected and harvested by hand.
  • Winemaking: Pre-fermentation maceration for 48 hours at controlled temperature. Separate harvest of each variety, destemming, crushing, alcoholic fermentation at controlled temperatures in small presses at 25ºC, with blanket submersion and pressing. De-lastage and pumping over with aeration. Post-fermentation maceration at controlled temperature. Malolactic fermentation in French oak barrels.
