  • Soil: The grapes used to make this wine come from vineyards at Quinta dos Castelares in Freixo de Espada à Cinta. We sought to achieve aromatic concentration and high acidity in this wine, thanks to vineyards planted at an altitude of 700m, in order to bring out the full character of the grape variety.
  • Winemaking: The harvest begins in early August to find grapes with high acidity and low sugar. The grapes are hand-picked and crushed directly into the pneumatic press, in a reductive environment at a controlled temperature. The first fermentation takes place with fine lees and “bâtomage” stage.
  • Tasting Notes: Fine and persistent bubble, with good mousse and vibrant acidity.
  • Maturation: After the second fermentation in the bottle using the classic method, the wine ages for around 12 months in the Quinta dos Castelares cellar. Manual “remouage” followed by “glacée degorgement” final refinement in the bottle.
  • Serve: Between 10ºC and 12ºC
