La Volée Baga Blanc de Noirs is a sparkling wine produced in a vineyard over 40 years old, cultivated in clay-rich limestone soil. It is a pale copper-colored sparkling wine with complex aromas of dried fruit and flower petals, and notes of brioche and delicate red fruit. On the palate, it presents a smooth and creamy mousse, a fruity and elegant flavor, with vibrant acidity and a dry, persistent finish.

  • Soil: Clay-limestone soil.
  • Winemaking: This wine results from the first selection of grapes, gently pressed and fermented in stainless steel. During bottling for the second fermentation using the traditional method, two multi-use French oak barrels were filled, where it aged for the same 48 months as the sparkling wine in the sur lie cellar. Periodic poignetage and riddling were carried out in traditional pupitres to achieve the structure that a great sparkling wine deserves.
  • Tasting Notes: Pale copper color, with complex aromas of dried fruit and flower petals, and notes of brioche and delicate red fruit. On the palate, it presents a smooth and creamy mousse, a fruity and elegant flavor. Vibrant acidity and a dry, persistent finish.
  • Maturation: First selection of grapes fermented in stainless steel. Second fermentation using the traditional method, two French oak barrels of various uses were filled, where it aged for the same 48 months in the cellar - sur lie. Periodic poignetage was carried out and remuage was done in traditional pupitres.

  • Food Pairing: It can be enjoyed as an aperitif, but it is also an excellent accompaniment to seafood, particularly fresh oysters. It is also an excellent choice for soft cheeses, such as young Camembert.
