  • Soil: On the volcanic mountain of Pico, the vineyards are planted in the cracks of the rock, next to the sea, where you can hear the “crab singing”, as this is where there is more sun and heat. The proximity of the vineyards, sometimes just a few metres away, means that the vineyards must be protected by walls (corrals) from the strong, salty winds of the Atlantic.
  • Winemaking: Selective manual harvest in 20kg baskets, whole bunch pressing, transfer after 24 hours to 600-1000L fermentation vats laid down like barrels, with the musts subjected to battonage during fermentation.
  • Tasting Notes: Clean citrine yellow color. Pure mineral aroma, citrine with notes of grapefruit. Tense attack, fresh with a very present minerality and acidity, good persistence and saline notes.
  • Maturation: Fermentation in 600-1000L vats, laid down like barrels, with the musts subjected to battonage during fermentation.
  • Serve: Between 11ºC and 13ºC
