Technical Sheet
  • Soil: On the volcanic mountain of Pico, the vineyards are planted in the cracks of the rock, next to the sea, where you can hear the “crab singing”, as this is where there is more sun and heat. The proximity of the vineyards, sometimes just a few metres away, means that the vineyards must be protected by walls (corrals) from the strong, salty winds of the Atlantic.
  • Winemaking: Selective manual harvest in 20kg baskets, whole bunch pressing, transfer after 24 hours to 600-1000L fermentation tanks.
  • Tasting Notes: Pale yellow citrine color, with notes of grapefruit, some lime blossom, almost honey. Aroma of the sea. Tense attack, fresh with fine bubbles and lots of salinity.
  • Maturation: Traditional method of sparkling wine aged for 12 months on lees. Batch composition: 90% 2014 harvest and 10% 2015 harvest.
  • Serve: Between 11ºC and 13ºC
