  • Soil: Very poor soils of schist or granite origin.
  • Winemaking: Hand-picked in 20kg boxes. The bunches are selected on a sorting table and then the grapes are crushed and transported to the fermentation tanks without the help of pumps. Here, they are left to macerate for between 3 and 6 hours at a low temperature, the resulting sangria ferments spontaneously at 12ºC in order to maintain all the aromatic potential.
