Sátio Adágio has a ruby ​​colour with intense violet hues and an aroma of ripe red fruits. The exuberant fruit, strength and youth revealed on the nose are reminiscent of artisanal Alentejo wines from clay amphorae. Some notes of black fruit and spices. Jams and ripe fruit reminiscent of plums. The palate is velvety, round and smooth, rich and 'greedy', with more minerals left by the clay of its origin. An intense, powerful but balanced combination. With a structure of firm tannins and balanced acidity.

  • Soil: Produced at Herdade das Assentes de Baixo, from Syrah and Aragonês grapes, carefully selected and hand-harvested.
  • Winemaking: Vinified in separate batches in clay amphorae and stainless steel presses. Amphorae batch vinified using the process used in Alentejo for over two thousand years. Completely artisanal process, complete fermentation, without the use of a pump, amphorae filled manually. Vinification with stems without the use of selected yeasts and without fermentation control. Long post-fermentation maceration, respecting the "traditional amphora wine" process.
