  • Soil: Poor soils, predominantly limestone.
  • Winemaking: Hand-picked grapes carefully selected in the vineyard and winery. Destemming and gentle crushing, cold skin maceration for 48 hours before fermentation began. Fermentation in 2 50L amphorae in a cold chamber at 14ºC with skin maceration for 3 weeks. After fermentation, the grapes were placed in stainless steel tanks and the skins were pressed manually. Aged on fine lees for 10 months.
