  • Soil: Under the influence of a unique microclimate, marked by the Serra de Sintra and the strong influence of the Atlantic, the vines of the native variety “Malvasia de Colares” grow in dune sand soil, free of phylloxera, without rootstock and a short distance from the steep cliffs of Colares. The result is a wine that combines all the characteristics of the westernmost terroir in continental Europe.
  • Winemaking: This wine is the result of careful vinification using the classic “open spout” process, with total destemming. The resulting must was statically decanted for 18 hours and began fermentation in stainless steel tanks with temperature control (16-18ºC) for 14 days. It was aged for 5 months in reconditioned 500-litre French oak barrels of Chardonnay from Burgundy.
  • Tasting Notes: The color is a very crystalline greenish yellow, clearly varietal with a predominant floral and herbal aroma with notes of white fruit such as plum or even lychee, in the mouth the salt is predominant with the wood balancing the whole.
  • Maturation: Aged for 5 months in reconditioned 500-liter French oak barrels of Burgundy Chardonnay.
  • Serve: Between 10ºC and 12ºC
  • Winemaker: Francisco Figueiredo
  • Conservation: 10 years or older.
  • Food Pairing: It pairs well with more elaborate and seasoned fish dishes. It goes very well with white fish carpaccio with a touch of mustard, clam rice with cones, Menier sole, or even some peas in a pan with a touch of mint.
