  • Soil: Plot of 10.5 hectares, part of a group of 12 hectares of vineyards planted in 2003, located on a wide, medium-altitude slope (375 metres), facing south, with a gradient of approximately 20%. Soil of granite origin.
  • Winemaking: The grapes were harvested on the 13th and 18th of September. Twelve people worked each day to manually de-stem and place the required quantity of berries in each of the 500-litre French oak barrels. No over-ripe berries were placed in the barrels, in order to ensure that the berries to be fermented would have the highest level of uniformity of ripeness and consequently the lowest standard deviation of their ripeness around the average. Skin maceration was carried out before crushing the berries for 5 days at a temperature of 10ºC or less for each of the 5 barrels. After these 5 days, the grapes were foot-trodden and alcoholic fermentation took place for 15 days with gentle maceration (using the traditional “macaco”).
  • Tasting Notes: It has a vigorous aroma, with predominant notes of ripe fruit, black cherries, blue berries and chocolate, all in harmony with the toasted wood. In the mouth it has body and structure with mature flavors, freshness and powerful, fine tannins that give it a long and tasty finish.
  • Maturation: Malolactic fermentation and aging for 22 months in French oak barrels. This is a wine in which no mechanical process was used throughout its winemaking and aging process. After bottling, it remained in the cellar for 8 months. This is a wine that was neither fined nor filtered.
  • Serve: Between 16ºC and 18ºC. It should be decanted 1 hour before serving.

  • Food Pairing: Red meat and, after 10 or more years, a soft cheese.
